April’s #INseason ingredient is Hearty Greens! Indiana greens, like lettuce and kale, are usually grown by hydroponics or inside in greenhouses.

This week, we had lunch at Duo’s Kitchen at IMG in Indianapolis, IN to explore some of their delicious greens.

One of Duo’s secret recipes is their collard greens, which taste delicious(of course!), but are also vegetarian!

Duo’s goes through 80 pounds of greens per week because this yummy side dish is available everyday at their cafeterias and can be eaten with any entree.

For our entree we had cannelloni, which features mustard greens and kale from Harvest Land Farms in Indiana.
